Bounties are the primary single-player element of Bang! Howdy, available at the sheriff's office. Each bounty involves "capturing" a particular outlaw by completing a series of three, four, or five missions; once all of the missions for an outlaw are completed, the outlaw is captured, and the player receives a set amount of scrip, and sometimes, a badge or duds. In contrast to the scenarios that ordinary matches are based upon, bounty missions have unique objectives, varying from simple goals, such as coming in first place or getting a few gold nuggets, to complex goals, such as defending a homestead without firing more than six shots.

Bounties are organized into two sets, town bounties and most wanted. Each set is broken down into three pages of five bounties each. Of those five bounties, four can be played immediately, and one requires the completion of three of the four on its page, and provides an additional reward (duds or a badge), in addition to scrip. Completing four of the five town bounties on a page unlocks the next page, while the most wanted bounties require deputy's stars which can be purchased in the General Store. Bounties can be replayed, but the rewards for a particular bounty can only be earned once per character. There are currently 50 bounties playable in-game.

The town bounties start with simple, easy missions that are a step up from the tutorials on the first page, then move on to more difficult missions on the second page, and highly challenging missions on the third page.

The most wanted bounties begin at a level of difficultly around that of the second-page town bounties, and become progressively harder. The first-page most wanted bounties require the town's copper star, the second-page missions require the silver star, and the third-page missions require the gold star.
